Most closely associated with Brittany, fresh, warm crêpes can also be found on many a street corner and at many a crêperie throughout France. This easy-to-use mix contains no sugar, so is suitable both for savory main-course and for sweet dessert crêpes.

Cooking Instructions: Required for preparation: one sachet of Francine crêpe mix, 16.6 oz of milk, one tablespoon of oil or 0.9 oz of melted butter and a pan. In a bowl, pour the milk and the content of one sachet of mix while stirring with a whisk. Add oil or melted butter and mix again. Pour the batter into a lightly oiled pan and heat (no need to let the dough rest!). Wait until the first side of the crêpe is golden brown before turning with the aid of a spatula. Allow the other sideto brown. Garnish as you like and enjoy.

Ingredients: Wheat flour, egg powder, wheat starch, salt. May contain traces of milk, soy, salt.

Crêpes au Sarrasin

Introduced in Europe in the 14th century, buckwheat (or sarrasin or blé noir) was until the late 1800s a real staple of Brittany and Normandy. Today its cultivation has much declined, but it is still the sine qua non for traditional savory crêpes and galettes.

Cooking instructions: To prepare 20 crêpes, you will need one sachet of mix, 16.9 oz of water, and a pan. In a bowl, pour the contents of a bag of mix and the water, stirring with a whisk. Mix until you have a smooth paste. No need to let the dough rest! Pour the batter into a lightly oiled pan. Wait until the first side of the crêpe is cooked before turning with the aid of a spatula. Cook the other side. Spoon filling into the crêpe (egg, bacon, cheese or ratatouille) and cook until warmed.

Ingredients: Buckwheat flour, wheat flour, egg powder, salt, whey powder. May contain traces of soy, sesame, nuts.

Mix for Choux, Chouquettes, Gougeres

This mix serves for sweet choux and profiteroles as well as for savory gougères (cheese puffs).

Cooking instructions: To prepare 20 choux or 40 chouquettes, you will need 1 sachet of mix, 3.3 oz hot water, and 3 eggs. Preheat the oven to 210 degrees. In a bowl, break eggs, add hot water and mix. Pour the contents of a bag of preparation and mix to a smooth paste. Place choux on a lightly greased baking sheet, forming small balls with a teaspoon and leaving space in between because they will swell during cooking. Sprinkle sugar on choux before baking. Bake 15 to 25 minutes depending on their size until they are golden brown. For gougeres, add 2/3 cup of grated cheese (Comté or Gruyere, for example) or crumbled blue cheese to the dough, then sprinkle a bit of grated cheese on top of the choux before baking.

Blinis or Pancakes

Cooking instructions: For 20 blinis, you will need 1 sachet of mix, 5 oz milk, one tablespoon of oil, and a pan. In a bowl pour the contents of one bag, milk and oil, stirring with a whisk. Mix until a smooth paste. Without waiting, heat the pan and grease lightly. Pour half a ladle of dough into circle about 2 inches in diameter. You can make 6 blinis at a time this way.
For 10 pancakes, you will need, 2 sachets of mix, 8.4 oz milk, a pan. In a bowl, pour the contents of 2 sachets of preparation and then add the milk while stirring with a whisk. Mix until dough is smooth. Without waiting, heat the pan and grease lightly. Pour half a ladle of dough into circle about 4 inches in diameter. You can make 3 pancakes at a time this way. Back when the top is golden pancakes.

Ingredients: Wheat flour, whole egg and egg white powder, oatmeal, sugar, baking powder (E500, E330), salt. May contain traces of milk, soy, sesame, nuts.

Gaufres (Waffles)

Cooking instructions: One sachet will make approximately 10 waffles. You will need, 1 sachet, 16.9 oz milk, and a waffle iron. In a bowl pour the contents of the bag and milk in batches, stirring with a whisk. Mix until dough is smooth. Grease the waffle iron and then heat. Cook the waffles 3 to 4 minutes.

Ingredients: Wheat flour, sugar, egg yolk powder,vegetable fat powder (stabilizer: E451) , whey, baking powder (E450, E500), aroma and salt. May contain traces of soy, sesame, nuts.
